Chicken Marsala with Mushrooms & Prosciutto

What is chicken marsala?

Chicken breast is pounded flat, into cutlets. It is then simmered in a marsala wine sauce with mushrooms and prosciutto. Marsala wine is has a nutty flavor. When the marsala wine is added to this dish, it is reduced into a velvety sauce. This dish is simple, only using a few ingredients, but it is one of the most flavorful dinners you will make. This is surely one of those meals you make when you want to impress the ones you love!

A meal to impress!

Prep and cook time is always something you need to consider when cooking for a date, or for guests. While I love an intricate recipe, if you choose something complicated with a lot of prep and steps, you then lose time with your guests. This chicken marsala is perfect for entertaining because it is both impressive in taste, and quick in the kitchen!
Prep ahead of time: flatten the chicken, slice mushrooms, portion out wine and broth. Mix the rice flour with the seasonings. This won’t leave you with much to do when your guests arrive. You can even cook the chicken ahead of time and wrap in foil to keep warm until you make the marsala sauce. The chicken will reheat when you add it to the sauce.

What is marsala wine?

Marsala wine is from Sicily. It is typically used in dishes that result in a caramelized nutty flavor. Let me tell you, it is really incredible how complex and delicious this sauce is, considering it’s really only made up of marsala wine and chicken broth! In this recipe, I use a “dry” marsala, which results in a nuttier flavor, than the “sweet” marsala available. If you only can find or have sweet, use that!

You Need

Method

Cook Chicken

    • Cut chicken breast in half, so you have two thin pieces of chicken.
    • Flatten chicken breast with mallet, or pan, what ever you have to hit it with to flatten it, to about 1/4 inch thick.
    • Mix rice flour with onion powder, garlic powder, black pepper.
    • Lightly dip each side of chicken in flour mixture.
    • Shake off excess.
    • Heat 2 teaspoons avocado oil in large skillet over medium heat.
    • Cook chicken, just shy of being done, about 2-3 minutes per side. 
    • Remove from pan. Put on cooling rack to rest.

Cook Mushrooms & Make Pan Sauce

    • In the same pan, add 2 more teaspoons of avocado oil over medium low heat, add mushrooms & a few dashes of kosher salt. Cook until beginning to caramelize, about 7 minutes. 
    • Add prosciutto pieces, and let them get slightly crisp.
    • Add chicken broth to deglaze the pan, scraping up the lovely bits of flavor that have accumulated.
    • Simmer softly over medium low heat for 1 minute, then add marsala. 
    • Simmer over medium heat stirring often, for 3 minutes, until reduced slightly. 
    • Add chicken back to pan with wine and mushrooms.  Let simmer for 1-2 minutes to reheat. 
    • Spoon sauce and mushrooms over chicken.
    • Plate for someone you love!
