What is a cornbread cowboy casserole?
Ground beef is layered with corn, beans, and peppers. On top a thick layer of cornbread batter is poured. The whole dish (or pan) is baked until the cornbread is puffy and cooked through. This casserole comes together in a flash, and makes for the perfect weeknight meal.
I use a small cast iron skillet for this recipe…
The recipe proportions fit the small 9″ skillet. If you have a large sized skillet, feel free to just double this recipe.

For the Filling

For this recipe I use a 9 inch cast iron skillet. One pan is all you need!
- Preheat oven to 375 degrees.
- Brown ground beef, some pink is ok, it will cook more in the oven later. Season with onion powder, garlic powder, salt, parsley.
- Remove ground beef from pan.
- In the same pan, saute chopped onion, and red bell pepper until soft.
- Add beef, corn, beans to pan. Stir to combine.
Make the Cornbread Topping

- In a medium bowl mix cornmeal, and all other dry ingredients for cornbread.
- Add honey, milk, egg, olive oil. Mix until combined.
- Add scallion.
- Pour over casserole filling in cast iron skillet.
- Bake 20 minutes.
- Enjoy!
