No dairy, or junky ingredients!
Traditional toffee uses highly processed cane sugar, graham crackers with wheat flour, and chocolate with all kinds of additives.
I recommend buying Hu brand chocolate, this chocolate is made with simple good for you ingredients!
For the graham cracker layer I like to use Simple Mills brand “Sweet Thins” they are made without gluten (wheat flour) and are made only with good for you ingredients! Fast Toffee (Easy recipe)
You Need
For the base layer
For the middle layer (caramel)
For the final layer (chocolate)
Method
To make the toffee
-
For the base layer
- On a sheet pan or heat proof plate, brush with coconut oil.
- Lay crackers side by side, in a single layer
-
For the middle layer
- In a small saucepan over medium heat add honey and coconut sugar.
- Watch this closely so it doesn't burn, and cook until bubbly, about 4 minutes.
- Do not over cook. If you cook this mixture too long the result will be a VERY hard candy once completely cooled.
- Working quickly, pour melted coconut sugar and honey mixture over the crackers. Smooth out evenly.
The mixture will be very sticky. To make things easier to spread out, coat a spoon or your offset spatula with some oil. -
For the final layer
Let the coconut sugar mixture harden.
Next, in a double boiler, met coconut oil and chocolate.
Drizzle the choclate over the coconut sugar honey mixture.
Spread evenly.
Let cool 5 minutes, and then sprinkle with the salt.
Let harden completely.
Break apart into pieces and devour!
To speed things up you can pop this into the refrigerator to harden.
