Everything you want in one little cup!
The cutest little breakfast (or anytime) cups. Shredded hash browns (homemade recipe below) sausage (homemade if you choose, see the recipe here) and eggs. What a delight these little breakfast cups are!
Hash Brown Sausage & Egg Cups

Method
Prep the Hashbrowns

- Or buy them from the store.
- Preheat oven to 400 degrees.
- Scrub potato. Peel if desired.
- Using the large holes on a box grater, grate potato.
- Rinse under cool water to remove the starch.
- Drain well. Pat dry very well.
- Season with salt, onion powder, garlic powder, Itallian seasoning.

- Lightly grease muffin tin with avocado oil.
- Divide shredded potato among 6 of the muffin cups. About 2 tablespoons each.
- Push the potato down, creating a well in the center.
- Bake for 30 minutes, or until just starting to turn golden brown.
Assemble Hashbrown Egg Cups

- Turn oven down to 375 degrees.
- Add one sausage patty into each of the muffin cups lined with the potato.
- Carefully crack one egg on top of each muffin cup.
- Bake for 30 minutes, or until egg is set how you like.

Or, you can buy bulk sausage and form them into small rounds to fit inside the muffin cups.
Note
Let potato cups sit for 5 minutes before running a small knife around the edges to loosen. Enjoy immediately. Or, let cool, and freeze. To re-heat, put into a 400 degree oven, covered for 20 minutes.
