Who needs rice?
Oftentimes I feel rice is laid on SO thick on a sushi roll, and I find myself just picking the majority of it off. Plus, making a sushi roll without rice at home is way easier than attempting to use that bamboo mat, get your rice the right sticky consistency, and fit everything in the roll and manage to roll it! Rice-less roll to the rescue!
What type of cucumber should I use?
The perfect cucumber for this recipe is an English cucumber. This is the long cucumber that comes wrapped in plastic. These cucumbers are long enough to make the long strips used to roll this roll. They also have less seeds, and are not as full of water as other cucumbers.
It’s important to blot out the excess water before making this roll. You could even let the strips sit out for a few minutes before rolling to help evaporate some of the water.

Dairy free cream cheese
I don’t know about you, but as a dairy free gal, I am always on the hunt for a better, CLEAN version of cream cheese. My latest awesome find is this Miyoko’s cream cheese. Only a handful of ingredients and I LOVE IT! Cashews, cultures & coconut cream. It doesn’t have any chemical thickeners or xanthan gum which are not good for you, and inflammatory! This brand is a great option for non dairy cream cheese in this recipe.
