Pumpkin Spice Blended Coffee & Ice Cubes!

When pumpkin season comes around you have to have the pumpkin coffee!

Coffee shops blend up some tasty pumpkin drinks, but they are full of ingredients your body doesn’t want. Thickeners, stabilizers, fake colors, and refined sugar makes your body fight back at you! Make this GOOD FOR YOU blended coffee instead!

Blended coffee drink, OR pumpkin coffee ice cubes!

Make this recipe 2 ways: #1 as above, for a blended frozen type drink (add less ice to make this more velvety smooth!). #2 pour blended mixture into ice cube trays and use these ice cubes in your iced coffee for the perfect pumpkin, creamy punch! Dairy free!

Instant coffee? Or cold brew?

I am a fan of both for this recipe. Although lately I have been SO busy basically making everything from scratch in the kitchen, I’ve given myself a break and use instant coffee. I am currently in love with death wish brand – it is organic, has a wonderful deep flavor and is very strong! Feel free to use cold brew coffee here as well.

You Need

For the Blended Coffee or Pumpkin Coffee Ice Cubes

Method

To make the blended coffee drink

    • Add instant coffee to the blender with a splash of hot water to reconstitute. Add the coconut butter, in liquid form.
    • Add the remaining ingredients in your blender. Blend until completely smooth, 2 minutes.
    If you add the coconut butter while it is solid, it will not emulsify in the blended coffee. It will harden and break into little solid bits throughout the drink. While the coconut butter is optional, you could use coconut cream or coconut milk, I find the coconut butter gives this blended pumpkin coffee its super velvety & whipped texture!

For the coffee cubes

    • Prepare the ingredients in blender the same as above. 
    • Instead of serving in a glass, pour into your ice cube trays. 
    • Freeze until solid.
    • Add cubes as you like to your cold brew coffee!
    • Or add a cube to your very hot coffee as a creamer, and a way to cool it down a bit!
