What kind of cucumbers should I use?
Persian cucumbers work great. They are smaller than regular cucumbers, about 4 inches long, and about 1/2 inch in diameter. They are often found in bags, a handful being sold together. I like this variety of cumber for this dish because they have less seeds, less water, and offer a bigger crunch than other cucumbers. These cucumbers slice up into bite size pieces, perfect for tossing in my tasty sesame sauce! These sesame cucumbers are great along side some other home made take out recipes. Try my beef stir fry with orange & bok choy as a main to serve with these sesame cucumbers! If you can’t find Persian cucumbers in the grocery store, try and find an English cucumber, wider and longer than a Persian cucumber, but less seeds and less watery than your traditional cucumber.

Crunchy Persian cucumbers are sliced into thick rounds and tossed in a savory sauce of sesame oil, coconut aminos, rice wine vinegar and red pepper flakes!

Method

- Combine all ingredients in a medium size bowl.
- Eat them immediately, or refrigerate and let marinate for 30 minutes to get chilly, and soak up the goodness of the sauce!
Note
If you can't find Persian cucumbers, the next best option is an English cucumber, these are usually wrapped tightly in plastic wrap to protect their delicate flesh. They too, have less seeds & water than your traditional cucumber.
