This super easy pasta salad is crunchy and bursting with bright vegetables. This recipe uses broccoli, bell pepper, yellow squash and a spring onion. I like to use a spring onion for this dish because it is very sweet, sweeter than any other kind of onion. A spring onion looks just like a scallion, but the white end is large and round, almost the size of a golf ball.
For the dressing…
To dress this salad, we mix mayonnaise, white wine vinegar, garlic powder, onion powder, and black pepper. That’s it, super simple, yet perfection!
Gluten free pasta
I use Jovial Foods brown rice pasta, which is perfect if you are gluten free because it tastes just like regular pasta. The texture is perfect, and there are only two ingredients- brown rice flour and water!

Prepare the Chicken

- Blanch your chopped vegetables (leave out spring onion) by submerging them in boiling water for 1-2 minutes.
- Drain and immediately rinse with cold water to stop the cooking process.
- Cook pasta, drain.
- While pasta is still hot, add spring onion. This will warm the onion and just slightly soften it. Add the remaining vegetables.
- Mix ingredients for the sauce, and then fold into the pasta.
- Enjoy!
