Sweet Tomato Pasta

A delightful pasta with bright roasted tomatoes, creamy garlic & parsley!

Okay. This pasta dish does take time. But it is EASY.

The way I think of it, this dish is perfect for you if you work at home or are having a lazy Sunday: the ingredients only need a little bit of attention every now and then. And at the end of the day, you just combine pasta, tomatoes, garlic & parsley and you’re done!

Roasted in the oven all day the tomatoes come out sticky and sweet.

With all the liquid evaporated, they are bursting with flavor!

Is there a shortcut version?

If you don’t want to be bothered to poach your garlic and roast your tomatoes (although I highly recommend you do!) you can substitute jarred sun dried tomatoes in oil, and jarred garlic in oil.

Serving size…

I have made the measurements to serve 1-2 people, you can easily double or triple this to feed more hungry souls.

Cherry tomatoes are roasted all day with a bit of sugar and become sticky and sweet! Mixed with parsley & poached garlic, this simple yet flavorful dish will quickly become your go-to!

You Need

Method

Roast the Tomatoes

    • Add tomatoes in a single layer, cut side up to a glass baking dish.
    • Add avocado oil, 1 teaspoon of kosher salt & sugar. Add 1/2 teaspoon dried oregano.
    • Preheat oven to 450 degrees, once at temperature, let sit for 20 minutes at 450 degrees.
    • Turn off oven, add tomatoes.
    • Let tomatoes roast slowly for the day. If you don't have the day, I would give them a minimum of 4 hours.
    Short cut method = buy sundried tomatoes jarred, in oil. Add a dash of sugar.

Poach the Garlic

    • In a small saucepan, add avocado oil & garlic. 

    • Cover. Bring to a full simmer, reduce heat and cook 5 minutes.

    • Remove from heat and let sit for 30 minutes. 

Combine with Pasta

    • Cook pasta.

    • Drain pasta. 

    • To pot add pasta, chopped parsley, roasted tomatoes & their oil. 

    • Add garlic, combine.
    When cooking the pasta, try the cold water pasta method! No need to boil a large pot of water. 1. Cover the pasta with 1 inch of water. 2. Bring to a boil, stirring occasionally. 3. Drain. No need to use a whole huge pot of boiling water, this method uses less water and works just as well!

Note
