Lemon Crab Salad
For the Vinaigrette
- Remove crab from shell (if using snow crab, or you can use canned).
- Add all veggies to a large bowl with crab.
I love re-using old jars with tight fitting lids to make salad dressing. They are perfect to vigorously shake the ingredients together to emulsify the dressing!
- Combine all dressing ingredients, shake well.
- Drizzle over salad, and toss.
- Serve immediately, or refrigerate, covered.
